Chickpea Stew/Curry/Thing

Welcome to the first addition of what made me wash dishes today. First up we have a Chickpea Stew-ish thing. If you're a stomach issue girlie like me then you'll have a fun gassy time with this one. But it tastes good and it's medium effort so go off.

Now, you will find that a lot of my recipes call for onions and garlic being chopped up in some regard so you have been warned.

FYI all the prices of ingredients below are rough estimates and are subject to the pain in my ass call inflation.

Notes on ingredients: no matter what form you get it in it more or less tastes the same so if you have dried coriander then go off queen. If you buy the pre-minced garlic from Coles because you're lazy like me, we stan! Ingredients are ingredients, do what you can.

 

Ingredients

Makes 3 Servings ish - $17.35~

  • 1 can of Chickpeas ($1)

  • 2/3 cup of Barley ($1.60/bag)

  • At least 3 cloves of Garlic ($1~)

  • 1/2 – 1 Brown Onion ($1~)

  • Coriander to your heart's desire ($3/pack)

  • 2 Tbs Ground Cumin ($2.90)

  • Sprinkle of Ground Ginger ($2.15)

  • 1 Tbs Paprika ($2)

  • 1 Tsp Ground Tumeric ($2.40)

  • 1 Red Chilli ($0.30)

  • Oil (I use Olive)

  • Salt

  • Pepper


  • Chopping Board

  • Knife

  • Big ass pot

Making the Mess

  1. Soak your barley as per packet instructions or at least wash it.

  2. Dice your onion and mine your garlic. Finely chop your coriander and chilli.

  3. Add oil to your pot, enough to thinly cover the base, and heat it up on a medium heat.

  4. Add your onions and garlic to the pot and stir-fry until partially transluscent.

  5. Add 2 cups of water and your barley and spices to the pot.

  6. Bring to a simmer for 15 min.

  7. Add the chickpeas, chilli and coriander. Cook for another 5–10 min.

  8. Done 


Pita Pockets

I usually add the "stew" into pita pockets with a veggie thing so here's the instructions for that

Ingredients - Yogurt Version

Makes 1 Serving - $15 maybe?

  • Small tub ~ 170g ~ of Greek Yogurt ($2.50)

  • 1/3 of a Cucumber ($2)

  • 1/2 a Red Apple ($4.90/kg)

  • Coriander or Parsley or both ($3/bunch each)

  • Salt

  • Pepper

  • Chickpea Stew

  • Pita Pocket ($4.40)

Making the Mess

  1. Dice your cucumber and apple, finely chop your herb.

  2. Add to your yogurt and season as desired.

  3. Warm up your pita pocket either on a pan or under a wet paper towel in the microwave (30 sec)

  4. Fill the pocket with the yogurt thing and the chickpea stew and nom nom nom.


Ingredients - Chop Salad Version

Makes 1 Serving - $15 maybe?

  • 1/3 Cucumber

  • 1/2 Tomato

  • Coriander or Parsley or both

  • Olive Oil

  • Salt

  • Pepper

  • Nuts if desired but I usually don't but macadamia or cashews could be nice

  • Chickpea Stew

  • Pita Pockets

Making the Mess

  1. Dice your tomato and cucumber. Finely chop your nuts if you want to add nuts. Finely chop your herbs.

  2. Add ^ to a bowl and drizzle with olive oil. Season as desired.

  3. Warm up your pita pocket either on a pan or under a wet paper towel in the microwave (30 sec)

  4. Fill the pocket with the veggies and the chickpea stew and nom nom nom.
